Oatmeal Walnut Chocolate Chip Cookies

From May 2009:

I wanted to share a fantastic cookie recipe that is so easy and nutritious. I just shared it with my weekly networking group and they gave it a thumbs up. Enjoy!

Ingredients:

1 cup Whole Wheat Pastry Flour

1 ½ cup Rolled Oats

¼ Tsp. Sea Salt

1/3 cup Expeller/Cold Pressed Canola Oil

½ cup Pure Maple Syrup

1 Tsp. Vanilla Extract

1/3 cup Dark Chocolate Chips

1/3 cup Chopped Walnuts

Directions:

Preheat oven to 350 degrees F.  Combine oats, flour, and salt together in a bowl:  set aside.  In a separate bowl mix together sweetener, oil and vanilla.  Add wet ingredients to dry mixture and mix well.  Stir in nuts and chips.  With moist hands form dough into 3” cookies and place on a lightly oiled cookie sheet or one lined with parchment paper.  Bake for 15-20 minutes, until golden on edges.

Prep time:  20 minutes

Yields:  1 dozen big 3” cookies
