Raw Cranberry Relish

Vegan, Vegetarian, Dairy-Free, Gluten-Free
I blended this up in about five minutes…so simple, delicious, and chock full of vitamin C, fiber, and manganese.
Cranberries also aid in digestion and support gut and colon health.
I use this relish as a topping for oatmeal, yogurt, latkes, quinoa fritters…the uses are endless…and it will last up to two weeks in your refrigerator.
1 C organic fresh cranberries
5 Medjool dates-pitted
2 TBSP chopped fresh ginger
1 tsp sea salt
1 orange or two mandarins
Juice of 1 lemon
1/4 C fresh mint leaves
Blend and top with a sprig of fresh mint…enjoy!
