Simple Hummus in the Blender

From February 2013:

IMG_2737This recipe is super easy and you’ll never want to buy store-bought hummus again!

Not only will you save money, but you’ll save on added salt and fat.

Give this a try – it will literally take less than 10 minutes of your time.

Ingredients:

1 ½ C organic chickpeas (1 can Eden Organics, drained)

½ C liquid from can of chickpeas or ½ C water)

2 Cloves garlic, peeled

2 TBSP sesame seeds

2 TBSP fresh lemon juice

¼ tsp cumin

¼ tsp paprika

Sea salt, to taste

Directions:

Place all ingredients in blender, in order listed.  Start the blender on low and increase speed to high, using the plunger to break up air pockets and crush the chickpeas.  If you’re using a conventional blender, stop and use a spatula to make sure chickpeas are pushed toward the blades.  If the mixture seems too thick, add more water.

Add salt at the end, then taste.  Feel free to add more spice according to your taste preference.

Can be stored in a sealed container in the frig for a week.

Enjoy with cut up veggies, crackers, in a wrap or in a sandwich!
