Gluten-Free Oatmeal

During the winter months I dream about hot cereal.  This recipe is so simple, quick, and satisfying.  Enjoy!

Gluten-Free Oatmeal with pomegranate, walnuts, and banana

YIeld:  2 servings

Ingredients:

1 C gluten-free oats

1 C unsweetened organic almond milk

1/4 tsp sea salt

1 tsp cinnamon

1 tbsp coconut oil

1 tbsp pomegranate seeds

1 tbsp walnuts, chopped

1/2 banana, sliced

Directions:

Combine oats, almond milk, coconut oil,  sea salt and cinnamon in small pot.  Bring to boil then cover and reduce to simmer for 10 minutes.

Uncover and add in the banana and cook for two more minutes.

Remove from heat and serve in a bowl and top with pomegranate seeds and walnuts .
